You know that carrots are associated with eye health. But latest research says it has anti-cancer properties too, and when added to your diet it lowers the risk of getting cancer. Carrots are rich in vitamin A and K. The phytochemicals in carrots; beta carotene which gives the orange colour to the vegetable, along with alpha-carotene and the carotenoids increase the activity of the immune system and they activate the proteins that act against the cancer cells. In several pieces of research, it was found that carotenoids in carrots; decreased the risk of colon cancer by 3%, increased the carotenoid levels in the blood of breast cancer patients to prevent further damage, reduced the risk of prostate cancer by 18% and lowered the risk for mouth, pharynx and larynx cancers.
